Hot Honey Chicken

So, My Wooden Spoon is holding a food challenge, Iron Chef style. She gave three ingredients and entrants have to use those 3 ingredients and make a yummy meal. The three ingredients for this challenge were hot sauce, honey and cornflakes. Immediately, a “breaded” chicken recipe came to mind. So here is what I did.
Hot Honey Chicken
3 Cups of Crushed Cornflakes
3 Tablespoons of Honey
2 Tablespoons of Hot Sauce
1.5 Pounds of Chicken Breasts.
3 eggs
1 Tablespoon of Minced Garlic
Cube the chicken using kitchen shears.
In a bowl, mix three eggs. Add the three tablespoons of honey, two tablespoons of hot sauce and one tablespoon of minced garlic.
Have a bowl ready with the Crushed Cornflakes in it.
Put the cubed chicken into the egg mixture, then in the cornflakes, then place onto a cooking sheet. (You can dip it back into the egg mixture and back into the cornflake mixture for extra covering.)
Cook at 375 degrees for one hour.
When brown all over and cooked well, remove from oven. Have a little bowl with just honey in it. Place each chicken piece into the honey just to cover the bottom, before placing on a plate to serve or directly onto a dinner plate.
The result is a little spicy, sweet and crunchy! I served it with brown rice and grape tomatoes that were cooked in oil and garlic.


















I do “fried” chicken this way often, but usually with mustard or BBQ sauce instead of honey as the glue to hold on the crushed cornflakes. I’ll have to try honey the next time!

LOL! Yes! Kevin ate the “Hot Honey Chicken”! He didn’t say it was too spicy? He couldn’t have the “extra honey” at the end, though, since he already worked out. I was still pre-workout, so I enjoyed my honey dip! LOL!

Wow, that’s a lot of hot sauce! I’ll bet my husband would love it – he’s the hot sauce fan in the house. Me, I’d be happy for the honey dipping sauce, too.
