Super Bowl Snack Ideas

Okay, so my friend Susan is so excited about the Super Bowl on Sunday! She is prepping snacks for the big day, thanks to the super Magic Bullet she won from As They Grow Up. But while that is great for her Margaritas, what else could she possibly have for her friends and family to snack on? Well, here are my suggestions for her … and all you other Football Fans, courtesy of Target’s Nutritionist Dr. Susan Mitchell:

  • Pizza Bites: Take an Archer Farms Simply Balanced pizza, such as Mediterranean Style Vegetable, bake as directed and then cut pizza into snackable, bite-sized pieces.  A great way to get an easy serving of nutrient-packed vegetables.
  • Garlic or Red Pepper Hummus: Simply serve with whole grain crackers, such as Archer Farms Simply Balanced whole grain eight grain crackers and veggie sticks.  Hummus is packed with great flavor and health benefits, with chickpeas being an excellent source of fiber.
  • Chips and Dip: Offer Archer Farms organic blue corn tortilla chips and organic mango peach salsa for a snack with a little kick.  As an added health benefit, all products in the Archer Farms collection have zero grams of added trans fats.
  • Fruit: Nothing is easier – or healthier – then serving a variety of fruit.  Arrange the fruit in a festive Super Bowl-style bowl with low fat yogurt and honey for a dip and watch it disappear!  Yogurt contains active live cultures and probiotics which promote digestive health and boost the immune system.
  • Whole Wheat Black Bean Quesadillas: Spread one tortilla with fat-free refried black beans, reduced fat shredded cheese, diced onion and green pepper. Spread guacamole on the other tortilla.  Sandwich both halves so all the fillings are on the inside and heat in a large skillet or griddle until tortilla is slightly brown and the cheese melts.  Black beans are a wonderful source of dietary fiber, which has been shown to naturally help lower cholesterol.

My thoughts:

Okay, first of all those ideas sound super yummy for the Superball, playdates, game night and more! I know my family has tried Archer Farms organic blue corn tortilla chips and LOVE them. Would you believe my 3 and 2 year old prefer them to animal crackers? And truthfully, you can’t keep a bag open around my husband and I. It may be that great, salty taste. Yet, they are organic and have zero grams of added trans fats! Oh…and as if the chips weren’t good enough – they come in a resealable bag. How cool is that? But honestly, once you open the bag they will be eaten so fast you won’t need to worry about the fresh-factor, but it’s a nice option!

The Mango Salsa is a perfect companion to the blue corn tortilla chips, but honestly I love salsa for cooking. My husband and I opened up a jar to cook with our boring chicken breast, giving it some zing and flavor. It was such a nice change of pace from our normal baked chicken. It had chunks of diced tomatoes, organic mangoes (one of my favorite fruits), organic peaches, organic jalapeno peppers (there is the kick) and a few other organic ingredients for taste. One serving is only 10 calories, so whether you add it to a dish or simply scoop up some salsa onto a tortilla chip, it’s a smart and flavorful choice on game day.

Finally, I could just kick myself for not buying hummus last time I was at Target. I just zoned out and left without it. But the boys and I have been munching on Toasted Eight Grain Snack Crackers as a healthy-choice snack. They are 130 calories for 18 crackers, have 3 grams of fat per serving, 0 saturated fat, 0 trans fat, 2 grams of sugar and 12 grams of whole grain! YUM! They are addictive, melt in your mouth, with the yummy taste of poppy seeds. If only I remembered the hummus, this tasty snack would have been even better! But at least it’s easy to stick a few servings sans hummus in a ziplock bag for playdates!

Overall, I think you may be surprised how Archer Farms can help complete a nice Superbowl Spread, as well as make a great day-to-day snack!     Oh I love hummus with veggies or in a whole wheat pita. perfect finger food and the black bean Quesadillas are a favorite of ours as well. Although I will admit that I have never purchased Hummus in the store, always make it fresh but so easy!

    Another yummy thing is to get the salmon in the pouch and place it on a 8″ or 10″ tortilla and top it with a little cheese and fold in half. brown it in the pan and serve with a side of salsa or sour cream of your choice.

    I am gonna have to try to locate the Arcer Farms around here. Davis likes his hummus with crackers and I bet he would love those
