It would be a shame if, as a Puerto Rican, I couldn’t make yellow rice from scratch. I can, with a recipe I got from my mother who learned from her mother. That said, when I pick up the kids from school, as much as I want to cook a meal from scratch, it is too time consuming when you add in homework and after school activities. I need to cook fast, yet delicious. I go the semi-homemade route, with help from my favorite products. Here is how I put Yellow Rice with Sausage on the table within 25 minutes of cooking time and minimal prep.
YELLOW RICE WITH SAUSAGE
- Box of Yellow Rice Mix, I LOVE Goya brand.
- Tomatoes, I chop 10 cherry tomatoes
- Pigeon Peas, 15 Ounce Can
- Chicken Broth, 2 cups
- Smoked Sausage, Pick Your Favorite Hillshire Sausage! Cut into diagonal slices.
- Onion Powder, Salt and Black Pepper to Taste
- Butter or Oil for cooking
Heat up either butter or oil in a pot. I even use Coconut Oil for this part. Then empty the box of rice mix into the heated pan. Stir it around so all the rice is covered with the seasoning. Add the can of pigeon peas. Next add two cups of chicken broth. Quickly chop up the Hillshire Smoked Sausage and tomatoes and add it into the pot. At this point the mix should be boiling. Lower the temperature to medium and cover the pot. Cook for 20 minutes, stirring occasionally. Taste test to see if additional seasonings, like black pepper, salt or onion powder, are needed. Once rice is softened, remove from heat and serve.
Other Options: My sister adds bacon to her version. And mixing it up with different Hillshire Sausages, beans and broths can all lend an individual taste that is all your own, making it deliciously and quickly semi-homemade.
